Sweet Potato Power Bowl

I am a HUGE fan of sweet potatoes. Not only are they rich in flavor,  they are ridiculously nutritious. I could honestly eat one every day. But I like this recipe because it’s a refreshing twist on the original steamed sweet potato. I named it the “power bowl” because the sweet potato, combined with the black beans and chickpeas is rich in nutrients to keep you full and energized all day long.


-Sweet Potatoes: Good source of Vitamin A, calcium, potassium and Vitamin C.

-Chickpeas: 1 cup equals 50 percent of daily potassium, also a good source of many other vitamins

-Black beans: Good source of protein, fiber

Recipe: Sweet potato power bowl

Serving size: 1

Prep & cook time: 10-15 minutes

Ingredients 2

  • 1 whole sweet potato, uncooked
  • 1/3 cup of chickpeas, drained
  • 1/4 cup of black beans, drained
  • 2 1/2 tbsp of Greek yogurt, plain
  • 1 tsp of Sriracha chili sauce
  • 1 tbsp cup of cilantro, chopped
  • 1/4 cup of mozzarella cheese or Mexican blend cheese
  • -Season with pepper, to taste


-Wrap the sweet potato in Saran Wrap or Press N’ Seal and microwave for 5 minutes and 30 seconds until sweet potato is softened enough. Let cool for 2 minutes before unwrapping.

-Drain the chickpeas and black beans. Store leftovers in containers for future meals. (They are good for about 3 or 4 more days.)

-Combine Greek yogurt and Sriracha sauce in a small bowl. Mix well with a spoon.

-Grab a regular sized bowl, unwrap the sweet potato and cut into it, spreading it around the bowl with a fork. It should fill the bowl completely.

-Now for the toppings! Add the chickpeas and black beans and then the Greek yogurt sauce. Sprinkle cheese on top and add chopped cilantro. Season if desired.
