OK, I have to admit, I’ve had mixed feelings about kale. When it became all the rage in the food world in 2015, it’s all anyone could talk about and cook with—kale this, kale that, kale smoothie, kale chips…you get my drift. It was sort of obnoxious. But amid all the buzz about the leafy green, kale and I have actually become very good friends!
Not only does the close relative of spinach give you a lot of energy, it’s delicious sauteed or raw and it’s quite cheap at the grocery store. So I decided it would add a nice crunch to my favorite lunch dish. The combination of creamy hummus, crunchy kale, and fresh veggies really adds some Mediterranean flair to this simple veggie wrap.
Recipe: Power hummus kale wrap
Prep & cook time: 5 minutes
Serves: 1 serving
- 1 8-inch wheat tortilla
- 1/2 cup raw kale
- 1/4 of an avocado, diced
- 4 grape tomatoes, halved
- 1 heaping tbsp hummus, any flavor
- 1 tbsp feta, crumbled
- 1 tbsp balsamic vinaigrette or balsamic vinegar
- Salt & pepper
Spread 1 heaping tbsp of hummus onto wheat tortilla. Make sure to spread evenly. Top with kale, grape tomatoes, diced avocado, feta and balsamic vinaigrette. spring with salt and pepper. Roll tightly and close ends and turn over and cut in half with a knife. Enjoy! 🙂
