Healthy pita pizzas

When I’m strained for time and in a bind, this is my No. 1 go-to healthy meal. These mini pita pizzas are filling and will satisfy your craving for any original greasy, and extra cheesy pizza.

I have made so many different variations of these, including grilled veggies topped with fresh shaved parmesan to classic cheese pizza with natural marinara sauce and turkey pepperonis. These little bundles of goodness are very simple to make and perfect to take to work for lunch or dinner. They are also a great a starter dish or appetizer!

Recipe: Mini pita pizzas (Mozzarella, spinach and yellow tomatoes)

Prep & cook time: 15 minutes

Serves: 2 people

Ingredients 2

  • 2 wheat pitas
  • 1/2 cup spinach
  • 4 oz fresh mozzarella, sliced
  • 2 tbsp basil pesto
  • 1 yellow tomato or use heirloom tomatoes, sliced
  • 2 tsp balsamic vinegar
  • 1 tbsp Italian parsley, chopped
  • Salt & pepper, to taste

Preheat oven to 350° F. Spread 2 tbsp of basil pesto on two pitas with basting brush or spoon. Add fresh mozzarella and tomato slices. Top with spinach. Sprinkle salt and pepper and drizzle balsamic vinegar on both pitas.

Bake in the oven for 10-12 minutes until cheese is fully melted. Let cool for 2 minutes and top with chopped parsley. Cut into slices! Yum!
