After a stressful week, the last thing I want to do is cook a meal. But I feel like making a pizza is put into its own category, and the options are endless when I’m given a piece of naan or pizza crust. Truth be told, I randomly came up with this recipe last week when I was battling a nasty head cold. Minimal effort required. I love buffalo sauce and naan bread, so I thought, why not combine the two? The results were better than I expected!
And the other bonus to this meal? It’s healthy and can erase those cravings for something fried and greasy.
Recipe: Buffalo chicken naan pizza
Prep & cook time: 15-20 minutes
Servings: 4 (or 2 hungry people)
- 2 baked naans, (I use Stone Fire brand)
- 2 tbsp of olive oil
- 1/4 cup marinara sauce
- 2 chicken breasts
- Mozzarella, parmesan
- 1 Roma tomato, sliced
- 1/4 cup red onion, sliced
- Italian seasoning, S&P
- 1/4 cup Crystal buffalo sauce
- 1/4 an avocado
Preheat oven to 400°. Chop two chicken breasts into cubes and sauté in skillet until cooked through, add S&P. Set aside and let cool. Toss chicken in 1/4 cup of Crystal buffalo sauce. If you want the chicken less spicy, just add less sauce.
Brush olive oil on both pieces of bread and then top with marinara sauce. Add sliced red onion, sliced tomatoes and a sprinkle of mozzarella cheese. Next, top with buffalo chicken and more cheese. Then, add S&P and Italian seasoning. Cook for 12-15 minutes until cheese is melted! Let pizza cool for five minutes and then add slices of avocado on top. Drizzle some more buffalo sauce on your masterpiece and cut into four squares and serve. YUM!
