Cheese is life, everyone. Whether it’s mozzarella, parmesan or a specialty cheese, I’m all in for some salty, nutty goodness. And what better way to make cheese the centerpiece of a dish than between two slices of bread?
Gouda is probably my favorite type of specialty cheese. It’s a Dutch cheese and has a mild flavor, with a hint of nuttiness. My palette is in love, eternally.
I’ll admit, I didn’t know if this grilled cheese was going to be good—but it was better than I expected. The flavors marry so well together and create a delicious experience. It’s the perfect combination of crunchy and gooey and sliding it in the oven really is eye-opening. No longer will I slide my spatula back and forth on the skillet for 10 minutes until the cheese is fully melted. The oven does it all for you and toasts the bread to the point of bistro quality. Usually, I share recipes that are super health conscious, but I’m too far gone when Gouda cheese is involved. And we have to splurge once in awhile right? This grilled cheese is the ultimate comfort food. Prepare to be completely content. 🙂

Recipe: Gouda, mushroom and rosemary oven grilled cheese
Prep & cook time: 20 minutes
- 1/4 of a small Gouda cheese wheel
- 2 slices of bread, (wheat, white, any bread really!)
- 1 tbsp of rosemary, roughly chopped
- 1/3 cup of mushrooms, white or baby bella
- 1 tbsp of olive oil
- 1 tbsp of butter
Preheat oven to 450 degrees.
Wash mushrooms in a strainer and throw in the skillet with 1 tbsp of olive oil on medium/high heat. While those are cooking, slice Gouda cheese. If you have a wheel or block of Gouda, cut about 7-8 slices (I like mine really cheesy). Place on one slice of the wheat bread.
Meanwhile, cook mushrooms until brown and tender, about 5-7 minutes. Melt some butter on low in a smaller skillet. Chop 1 tbsp of rosemary and set aside. When mushrooms are done, take them off the burner and let cool for a minute or so. Next, prepare the sandwich by placing sauteed mushrooms on top of Gouda cheese. Sprinkle the rosemary on top. Place wheat bread on top and add butter to the slice of bread.
Place non-buttered bread side down on the skillet and transfer the pan to the oven. Cook for 6 minutes on one side and flip it over and cook for 3 more minutes.
And there you have it! The easiest gourmet grilled cheese ever. And it’s so yummy.
