Effortless chickpea salad

Do you ever have those days when you want something healthy but have no desire to put in the effort? I’ve had many of those days and one of them happened to be today. I was in a hurry to get to the office and I didn’t have time to eat lunch at home. But I wasn’t going to spend $8-$10 on mediocre fast food. So I dug around in my pantry and created this simple chickpea salad with a delicious, light dressing and threw it into a to-go container.

Recipe: Chickpea salad

Serves: 1-2 servings

Cook time: 5-10 minutes

Ingredients 2


  • 1/2 cup chickpeas, drained
  • 6 cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1 tbsp feta, crumbled

For the dressing:

  • 2 tsp of olive oil, (regular or herbed)
  • 1 tsp of balsamic vinegar
  • 2 basil leaves, chopped
  • 1 tsp of parsley (fresh or grounded), chopped
  • Salt and pepper (a dash of both)


-Drain the chickpeas in a colander and then add 1/2 cup to the bowl. (Put the leftovers in  a container for later!) Chop 6 cherry tomatoes and dice 1/4 cup of cucumber. Add to chickpeas and then throw in 1 tbsp of feta. 

-Combine olive, oil and balsamic vinegar in a separate bowl. Chop the basil and add to the bowl as well as the parsley, salt and pepper. Whisk together.

-Add the dressing to the other ingredients and gently toss. Add to a bowl or to-go container and you’re ready to get on with your day!




Hope you enjoy this recipe! It’s easy and delicious and perfect for a simple lunch. You can also switch up the vegetables depending on what you have in your fridge. Other great vegetables to add are red onion, avocado and sweet peppers.
